So the big game is this Sunday that means a lot of fiestas and a lot of fooooooood! Here is some good stuff you might want to make. Some healthy some not so healthy LOL.
1. Goat cheese and chorizo rolls
Ingredients
- 8 ounce(s) fresh goat cheese

- 1 cup(s) chopped dry chorizo
- 1 1/2 tablespoon(s) minced chives
- Salt and freshly ground pepper
- 9 12-by-16-inch sheets of thawed phyllo dough
- Melted butter, for brushing
Preheat the oven to 400° and line 2 large baking
sheets with parchment paper
. In a bowl, combine the goat cheese, chorizo, and chives; season with salt and pepper.
- Lay a sheet of phyllo on a clean, dry work surface and brush it with melted butter. Top with 2 more phyllo sheets, lightly buttering each sheet as you go. Cut the phyllo into 6 rectangles. Place a tablespoon of the goat cheese filling at the base of each rectangle and roll up the phyllo, folding in the sides. Set the rolls on the prepared baking sheets. Repeat twice more to make 18 rolls total. Brush the rolls with butter; bake
for 10 minutes, until golden. Serve hot.
Mo's Sticky Ribs
Ingredients
- 2 1/4 pound(s) baby back ribs
- Salt and freshly ground pepper
- Granulated garlic, for sprinkling
- Extra-virgin olive oil, for drizzling
- 1 tablespoon(s) whole cloves
- 1 12-ounce bottle of lager
- 1 cup(s) ketchup
- 1 cup(s) peach or apricot jam
- 3 tablespoon(s) fresh lemon juice
Directions
- Preheat the oven to 300 degrees. On a rimmed baking sheet, season the ribs with salt, pepper, and garlic. Drizzle with oil and scatter the cloves over the ribs and in the pan. Pour the beer over the ribs, cover with foil, and bake for 2 hours, until the meat is tender.
- Strain the pan juices into a saucepan. Whisk in the ketchup, jam, and lemon juice and boil over high heat until reduced to 1 1/2 cups, about 20 minutes.
- Preheat the broiler. Set the ribs meaty side down on the baking sheet, brush with glaze, and broil 4 inches from the heat for 7 minutes. Turn the ribs and brush with half of the remaining glaze. Broil for 10 minutes, until starting to char. Brush with the remaining glaze and broil until browned, 10 minutes. Let rest for 10 minutes and serve.

Frito Pie
Fritos
1 Can of Chili for every 2 to 3ppl
Shredded Cheddar
jalapenos (can or jar)
Put Fritos in individual bowl
Heat chili on stove
while heating add about 1/3 to 1/2 a cup of water for every can of chili. You want it to be a little soupy ( I know it sounds weird but trust me. If you don't add water it will be way to thick)
Once chili is heated add to Fritos then top with cheese and Jalapenos.
Spicy Dip
1 Packaage of Ground Beef
1 Box of Velveeta (Size depends on # of people)
1 Jar of Pace Picante Sauce
Cook beef. Drain. Add Velveeta and Pace.
Here are some drink recipes that sounded pretty interesting to me.
Lemon Rum Slush
• 1/4 cup sugar
• 2 (6-ounce) cans frozen lemonade concentrate
• 2 cups water
• 1 1/2 cups pineapple juice
• 2 cups rum
Stir all ingredients together in a freezer safe bowl, making sure that the frozen lemonade is well mixed. Freeze 6 hours, stirring occasionally.
Remove from freezer and stir until slushy
Orange Vodka Slush (Frozen Screwdriver)
• 1 (6-ounce) can frozen, undiluted orange juice
concentrate, thawed
• 1 cup milk
• 3/4 cup vodka
• 2 tablespoons granulated sugar
• 8 to 10 ice cubes
Combine all ingredients in an electric blender and blend until mixture is smooth.
Jello Shots
• 6 ounces Jello (large box)
• 2 cups water (boiling)
• 1 cup water (cold)
• 1 cup alcohol (8 ounces)(cold)
strawberry jello - rum, vodka or vanilla twist
orange jello - peach schnapps or rum
lime jello - tequila
watermelon jello - vodka
grape jello - 1/2 vodka and 1/2 blackberry schnapps
lemon jello - vodka
rasberry jello - vodka
apple jello - buttershots
Mix the jello mix with the boiling water until the powder is fully dissolved then add the alcohol and cold water. Spray unflavored cooking spray into small cups. I have found that either 2 ounce solo cups or 1 ounce souffle cups work best. Small medicine cups work fine too. Pour mixture into small cups and freeze.
To make stronger jello shots you can use more alcohol and less cold water, but be careful doing this because the alcohol can sneak up on you! Also if you are using a strong alcohol do not increase the amount because the jello may not set.
